Located at a relatively quiet street in Tomas Morato area, Ponce is an oasis for fine foods and drinks. This creative and chic lounge serves Filipino-Spanish delights. And this coming Valentine’s Day, Ponce carefully planned an 8-course meal showcasing Chef Santi’s innovative take on modern cooking.
Quality is always the top priority for this dinner menu compilation. They make sure every ingredient for each dish is on perfect value. Let’s start the gastronomical date adventure, shall we?
Explosion de Jamon Iberico Croquetta – we were greeted by this Spanish croquette with Iberian black pig ham and Spanish cheddar cheese. This bite-sized wonder definitely is an amuse-bouche or an amusement for the mouth.
Sopa de Hongos Silvestres – after the opening bites, a black bowl with croutons and friend enoki came into our table. This was accompanied by a little ceramic that contains the wild mushroom soup with white truffle oil, and then eventually poured into the bowl. Hearty and warm, fantastic.
Lengua En Taco Manchego – to cap off the set of appetizers, we had beef ox tongue in Manchego cheese taco shell in the end. The beef was seasoned lightly, complemented by the complex sauces on the side. A well-garnished remarkable dish.
Sorbete de Naranja y Menta – we got to rest our palate with this orange and mint sorbet, a signal that we’re already progressing for the main event. This is water and ice slush flavored very lightly, with lemon peels at the side for the extra aroma. This one rejuvenated our appetite for the next ones to follow.
Salmon a la Vizcaina, Pasta de Erizo de Mar – pan seared salmon, Vizcaina sauce and supposed-to-be sea urchin pasta but we got truffle pasta that time. We got word that the quality of the uni delivered that day didn’t pass their standards so they had to improvise. We didn’t mind the change, we actually appreciated Ponce more for standing strong for quality’s sake. Still, it was an indulgent plate of pasta and fish.
Pollo Relleno Organico, Pure de Maiz y Emulsion de Chorizo – on to our second main dish, we had rolled organic chicken with Jamon Serrano in corn puree, then we got to pour the chorizo emulsion on the side to our desired content. The rolled chicken with ham was very tender and flavorful to our surprise. If not for the next dish, this should be our favorite of all.
Carne de res Angus Primera de Calidad – the pinnacle of the mean, this Prime Angus Ribeye got straight to the point, the potato puree and roasted vegetables were added for additional contrast but the meat instead can stand on its own. This one’s a plate to remember.
Pastel de Terciopelo Rojo – we just can’t stop marveling at this exquisite red velvet lava cake. It is served with chocolate shavings and topped with vanilla ice cream, amplified with gold leaves for a more elegant dessert presentation.
We ended the meal with a Moët & Chandon Imperial Brut Champagne for a luxury like no other. Cheers!
